Countdown to Christmas Noms- Day 8 Sheet Pan Chicken Fajitas

Hello hello! Back again (after another busy few days- why did I decide to do this now!?!) with an EASY and QUICK dinner for when you’re having a block of busy days! These sheet pan chicken fajitas are so good and super easy to make. Its a 3 ingredient meal (not including oil, salt and pepper, and toppings, but still easy) that is an absolute cinch to put together.

Heres what ya need!

The gals
  • 1 lb chicken breast, cut into cubes
  • 2 green bell peppers, and 1 red bell pepper (you can use whatever color you want, but in the spirit of Christmas joy, I used red and green)
  • 1 medium-large onion
  • salt and pepper to taste

Now comes the hard part:

Slice them up!

Slice the peppers and onion. Put them on a sheet pan with the chicken. Add salt and pepper (I used about a teaspoon of each but more or less is fine too!).

Now the even harder part:

How they look after baking

Put the whole sheet pan in the oven at 375º for 30-45 mins (depending on your preference for shoe leather chicken- which if we’re being honest, I LOVE) and forget about it.

Right before you devour them

You can add anything you want on top! Cheese and salsa are my preference but you can do whatever!!

The best quick dinner during busy nights leading up to the holidays or any other time!!
