A whole week! WHAT!!! Its day 7 of Countdown to Christmas Noms!!! Can you believe it?! Oh man. It has been A week. In case you haven’t noticed, I kind of have a thing for snowmen. They’re all over my house. These mini snowman cheesecakes are one of my favorite things I’ve made so far. They’re so CUTE and they sure are (were…) delicious. This recipe makes exactly 12 cupcake sized snowman cheesecakes.
Heres what ya need!
For the crusts:
- 1 cup of graham cracker crumbs
- 3 Tbsp butter, melted
For the Snowman (filling):
- 2 8oz blocks of cream cheese (or again, if you’re feeling fancy and 1/2 less fat, neufchâtel)
- 1/2 cup sugar
- 2 eggs
- 1 tsp GOOD vanilla
- zest of 1 lemon
For the Faces:
- orange melting chocolates (melted)
- mini chocolate chips (NOT melted)
- white chocolate chips (melted)
Heres what ya do!
Mix together the graham cracker crumbs and butter until totally combined. Spoon 1 Tbsp of the filling into each cupcake paper (you will have extra leftover). Bake at 350º for 5 minutes until the crusts are a little toasty.
Using a hand mixer (or stand mixer, or a spoon and bowl if you’re old school) beat the cream cheese and sugar until light and fluffy. Add in the vanilla and lemon zest. Then add in the eggs, one at a time. You SHOULD have a smooth lovely homogenous mixture at this point.
Now fill your cups 2/3 of the way up. I used a ziplock bag for my filling so I didn’t spill everywhere because you know…mess. Bake the cheesecakes for 25-30 mins (still at 350º). (The cheesecakes may bubble up, but don’t worry, they’ll fall and look like real cheesecakes after). Let them Chill (HA!) in the fridge for at least an hour before decorating.
When the Snowman Cheesecakes come out of the fridge, you have multiple options. You can just stick the mini chocolate chips into the cheesecakes directly (for the face) or you can spread white chocolate on the cheesecakes then add in the mini chocolate chips. I made a face and a body (so you can eat 2 and not feel AS bad?)
